Turn a category into numbers
Distinguish category labels from meaningful numerical order.
Models operate on numerical representations. A category can be represented by a one-hot vector, while other tasks use different encodings or learned embeddings. Assigning IDs to categories does not automatically give those IDs a meaningful order or distance.
Choose a category to see one-hot encoding: one position is 1, the rest are 0. This is a manually specified encoding, not a learned semantic vector.

Cat → [1, 0, 0]
IDs 1, 2 and 3 would only label categories; they would not establish size, rank or semantic distance. Choose representations to suit the task.
